The Real Olive Experience
This years fruit was very large. I picked earlier to minimise bird damage.
These are large plump Spanish Queen Olives that have been washed daily for about 3 weeks, then soaked in a brine solution. This is replaced after a month with fresh brine and a little vinegar.
After 4 months in Brine the flavour is well balanced.
These are great for snacks or additions to pasta, pizza and tapenade.
