Olio Nuovo -the new oil from June 2023 harvest.
A limited release of fresh bright green cloudy unfiltered oil is available for a short time only. This season’s oil is vibrant and full flavoured (robust) and the freshest (and best) oil you can have – rich in polyphenols essential for good health. The oil takes time to settle and clear forming a sediment on the bottom of the tank which is then raked off to prevent the oil deteriorating. Each tank is covered with a layer of argon to stop oxidation and preserve the oil. Argon is inert and heavier than air so sits on top of the oil to displace air and oxygen.
